The oil
We produce a certified organic extra virgin olive made on the same day when the olives are harvested. The olives are harvested from about a thousand olive trees of the following varieties: Frantoio, Leccino and Moraiolo. We entrust our olives to oil mills which work around the clock and at temperatures that can preserve the best organoleptic properties of the oil, which is then filtered after resting for a day. Our oil is clear and green in colour. Every year it has notes of excellent olfactory complexity and finesse, you can perceive vegetal and herbal aromas along with a gentle hint of rosemary. When tasting our oil you’ll find the good support of its full body, and a hint of hot and bitter spice properly blended that leaves space to a final note of green almond. Selected from the Italian Slow Food Guide of extra virgin olive oils since 2010, we sell it and label it directly in the farm, delivering it personally in the municipalities of Bagno a Ripoli and Florence, and we also ship it all over the word by courier service. The honey project
In the last few months we have started a beekeeping project placing beehives in an area above 400 meters altitude and we would like to start the production of mixed blossom honey.
